Gry, among many other projects, designed the Stitches Collection for Menu. She is an incredibly kind, thoughtful and talented person and I was thoroughly delighted to read of her Christmas traditions and favorite memories.
So graciously Gry has shared a favorite family recipe with us for 1, 2, 3 Hap Cakes!

1, 2, 3 Haps cakes
This recipe I have from my grandmother and in our family these cakes will no doubt be on the table...The name signifies that when you have started eating the cakes you cannot stop... 1,2,3 and they are gone….
They are easy to make:
300 grams wheat flour
200 grams butter (it has to be real butter!)
100 grams sugar
A little chopped hazelnuts – approx 1 deciliter.
All is put into a bowl with your hands and it is important to use your hands because it is the warmth from your hands that will soften the butter. When the dough is OK, you roll it into a couple of long rolls. You place them chilly for at least 1 hour. Thereafter you slice the rolls up in small round cakes and you put them in the oven for 8-12 minutes…until they have a golden color… oven temperature 225 degrees celsius… and then 1,2,3 haps.. they are gone…;-)
